Spinach Stuffed Mushrooms

2 T butter
1 shallot, minced (or 1 large minced clove garlic and 1/3 cup minced onion)
12 – 16 large fresh mushrooms
1 pkg (10 oz) frozen chopped spinach, thawed and drained
1/2 cup seasoned bread crumbs
1 cup (4 oz) shredded cheese (combo cheddar, mozzarella, parmesan)
1 egg, lightly beaten
Salt and pepper to taste

Remove stems from mushrooms; chop stems (do not have to use all). Arrange mushroom tops in a buttered shallow baking dish.
Saute shallots in butter for a few minutes, add mushroom stems and sauté until soft.
Combine spinach, bread crumbs, cheese and egg. Stir in cooled shallots and stems.
Season to taste.
Fill mushrooms tops with mixture, sprinkle with a little more cheese.
Bake at 350 for 15 to 20 minutes.
