Spinach Parmesan Balls updated 2/6/25
Source: combination of recipes

1 (10 ounce) package frozen chopped spinach, thawed and drained
1 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese, or choice of other cheeses
4 T butter, melted
1 shallot, finely chopped (or 1/4 tsp each onion and garlic powder)
2 eggs, lightly beaten
1/4 tsp salt
opt: black pepper to taste

Saute shallot in butter until soft.
Combine the spinach, bread crumbs, parmesan cheese, butter, sauteed shallot, eggs, salt and pepper. Shape the mixture into 1 inch balls.
Arrange the balls in a single layer on a large baking sheet. Bake at 350 for 10 to 15 minutes, until lightly browned. Makes about 30 balls
