Salsa
28 oz tomatoes (I like Pomi chopped in the box)
1/2 cup chopped onion
1 jalapeno, seeded, chopped
1 large garlic clove, smashed and rough chopped
1/2 tsp salt, more or less to taste
red pepper flakes to taste, depending how hot the jalapeno is
1-2 T fresh cilantro
juice from 1/2 lime
dash apple cider vinegar
opt: pinch sugar to taste
Fresh: Chop by hand or combine all in food processor, process until desired chunkiness. Let stand for at least 2 hours.
Cooked: Add processed mixture to pan and heat until veggies are slightly wilted for a "less fresh" taste (I prefer this)
