Reuben

8 slices rye bread
4 tsp coarse grain deli mustard
1 pound corned beef or pastrami, thinly sliced (can sub turkey for turkey reuben)
1/2 pound Swiss cheese, thinly sliced
8 oz sauerkraut, drained
1/2 cup Russian dressing

Spread 4 slices of bread with mustard. Layer each bread slice with 1/4 pound meat followed by 2 oz swiss cheese and 2 oz sauerkraut. Spread 2 T Russian dressing on the remaining 4 slices and place dressing side down on top of sauerkraut.

Toast the sandwiches - melt some butter in a large skillet, toast sandwiches until golden brown - about 3 to 5 minutes, turn over and toast for 3 to 5 more minutes.
