Flour tortillas
Choice of fillings below

Place one tortilla on baking sheet, top with filling and another tortilla. Bake at 350 for 10-15 minutes until browned and hot. Using pizza cutter, cut into 4 wedges.

Fillings:
mexican cheese blend - shredded cheddar and monterey jack, sliced green onion, jalapeno
chicken - add shredded chicken to above mexican cheese blend
steak, onions, peppers, cheese
ham, cheese, scrambled egg, peppers and onions

Black Bean:
1 cup canned black beans, rinsed and drained
1/4 cup red onion, minced
1/4 cup green pepper, minced
opt: jalapeno, minced
1 clove garlic, minced
1 T lime juice
1 T chopped cilantro or parsley
salt to taste
opt: chopped tomato
opt: corn
4 burrito-size flour tortillas
1 cup grated cheese

In small bowl, with fork, slightly mash black beans. Saute onion and pepper in olive oil until soft, add garlic for last 30 seconds. Combine with beans, lime juice and seasoning. Spread 1/2 cup bean mixture over one tortilla; top with 1/2 cup cheese.


Sides:
salsa, marinara sauce, quacamole, sour cream
