Jalapeno Poppers
Source: combination of recipes

8 jalapeno peppers
4 oz low fat cream cheese
1/2 cup shredded cheddar or blend of cheddar/monterey jack cheese
2 T mayonnaise
2 scallions, sliced
dash chili powder
dash garlic powder
1/4 teaspoon salt, or to taste
opt: 4 slices bacon, cooked and crumbled
dry breadcrumbs, panko or cornflake crumbs for topping

Halve jalapenos lengthwise and remove seeds.
Combine cheeses, mayo, seasonings and optional bacon.
Divide evenly and spoon into jalapeno halves.
Top with crumbs and place on greased cookie sheet.
Bake, uncovered, at 350 for 30 minutes
