Parmesan Toasts

1/2 pound day-old country-style bread, sliced 1/8-inch thick
Extra-virgin olive oil
1/2 cup freshly grated Parmesan cheese

Preheat oven to 300 degrees. Brush one side of each bread slice with olive oil. Dust the oiled side with the Parmesan. Arrange on a baking sheet and bake until golden brown and crisp, 20-25 minutes. Serve warm or at room temperature. You'll need a serrated knife to slice the bread thinly. If you slice a baguette on an extreme diagonal, you can make long toasts that look dramatic.
