Stuffed Mushrooms
12-16 medium-large mushrooms
1/4 cup butter
1 clove garlic, minced
1/2 cup onion, minced
opt: 1/4 cup mild Italian sausage
1/2 cup Italian breadcrumbs
1/4 cup Parmesan cheese, grated
1 tsp dried flaked parsley
1/2 tsp salt
Remove stems carefully so as to leave mushroom cap intact. If not using sausage, chop stems. Saute garlic, onion, sausage or stems in butter until soft. Add bread crumbs, cheese, and spices. Using a fork to mix, it should be moderately moist, and stick together when pressed. Use a spoon to fill each of the mushroom caps. Place caps in greased baking dish.
Bake at 400 degrees for approximately 20 minutes until the mushrooms are soft, and the stuffing has started to brown.
