Mozzarella Sticks

3/4 cup Italian-style breadcrumbs
1/2 cup flour
3/4 cup freshly grated Parmesan
1 tsp salt
1 block mozzarella (16 oz) cut into 2x1/2-inch sticks
3 eggs plus 1 T water, beaten
oil, for frying
salsa or marinara sauce

Stir the breadcrumbs, flour, parmesan and salt together in a shallow bowl.
Dip the cheese in egg mixture, then coat in the bread crumb mixture.
Place on a baking sheet, until all are coated.
Coat a second time - repeat dipping in egg, then breadcrumb mixture.
Cover and freeze until frozen, about 2 hours and up to 2 days.

Heat the oil in a large frying pan over medium heat.
Working in batches, fry the cheese until golden brown, about 1 minute per side.
Serve with salsa or marinara sauce.
