Italian Tortilla Rolls

Dressing:
red wine vinegar
light olive oil
salt, pepper, oregano

thinly sliced red onion
finely shredded romaine lettuce
flour tortillas
capicola (spicy italian) or virginia ham
provolone cheese
genoa salami
thinly sliced tomato

Mix onion and lettuce in bowl, toss with dressing ingredients. Let stand 15 minutes.
For each tortilla, layer a few slices ham, provolone, salami, tomato and lettuce mixture.
Roll up tightly, wrap in plastic wrap.
