Homemade Caramel Corn

3 1/2 oz unpopped popcorn
opt: a couple handfuls of dry roasted nuts
1/4 cup butter
1/2 cup brown sugar
2 T corn syrup
dash salt
1 tsp vanilla
1/4 tsp baking soda
Pop popcorn, place in bottom of paper grocery bag (with optional nuts).
In microwave safe bowl, melt butter. Stir in brown sugar, corn syrup, salt and vanilla. Microwave for 2 minutes. Add baking soda and stir well.
Pour caramel mixture over popcorn in paper bag.
Shake and stir well.
Put entire sack in microwave for 1 minute and then shake again.
Pour over cookie sheet to cool.
